Cascina Gilli was born on a ridge of white soil, in an area historically suitable for the production of quality wines. The presence of the marls of Sant’Agata, found only in a few other great terroirs, results in wines with intense aromas and an elegant body. The first bottles were those of a still Freisa from the 1985 harvest, with the aim of bringing this type of product to a qualitative connotation of excellence. A few years later the company began producing Malvasia di Castelnuovo Don Bosco, which was enthusiastically received by critics. Today the farm cultivates about 12 hectares and, in addition to continuous experimentation and research of Freisa and Malvasia wines, has expanded its production to other grape varieties historically linked to the area, such as Nebbiolo, Barbera and Bonarda.
